Olive oil made by soulful winemakers always transcends the stuff you use to coat the bottom of a pan. Dani of La Onda and Cara and Aaron of Frenchtown Farms have collaborated and bottled a most stunning, shockingly-flavorful, expressive California olive oil. It's a beautiful expression of North Yuba, golden green and brightly flavored, with a hint of bitterness and spice. 

The olive grove in North Yuba sits just below Slope 19, where Syrah grows equally untamed. Three hundred peacefully-stretching trees reach their old limbs out wide, waving gently at the snow-capped Sierras in the background. No chemicals are used and everything done by hand, just like Dani's winemaking. This is an unfiltered, unprocessed, pure expression of this special, though tiny, speck of land. 

I can't think of a better way to finish a rustic dish or salad but honestly, my favorite thing to do is to drag a piece of fresh bread through it shamelessly, and then sprinkle a healthy dose of fancy salt on it to amplify its wildness.
